We believe that the Vinho Verde region has the potential to produce light and elegant red wines, without any obligation to include the Vinhão grape variety.
We sought out grapes with thinner skins, less color, and fresher aromas. We chose (Es)Padeiro (from Basto, which, as it turns out, is not from Mondim), a grape variety undervalued by so many. We enhanced its profile by fermenting in a glass globe through carbonic maceration, with part of the grapes crushed and 3% whole clusters. After pressing, the wine returned to the glass globe, where it completed fermentation and then aged for 6 months on full lees.It is part of Esporão's innovation project "Fio da Navalha".
