Olive oil with a subtle profile and great smoothness, achieved through the harvesting of ripe olives to produce sweeter oils with a more delicate profile.

The 2023 agricultural year was hot and dry. During the winter, mild temperatures and high precipitation levels were observed. In the spring, abnormally high temperatures affected the flowering process, leading to significant production losses.
The olives are received and sorted by variety at the Esporão mill just a few hours after harvest, and are immediately processed. The extraction process begins with the rapid milling of the fruit, followed by a passage through the active heat exchanger, a system that shortens extraction time and preserves the aromas of the varieties that characterize this olive oil. The paste is then centrifuged, and the oil is mechanically separated from the olive pomace. The oil is immediately filtered and bottled. Extraction is carried out cold, at a maximum temperature of 26ºC.
