about the wine

This wine was originally intended to serve as the base for a sparkling wine, but, due to the vicissitudes of life, it ended up being forgotten. As a result, this Mosca remained in a vat for ten long years, aging on fine lees and gaining the complexity that only time and persistence can bestow. When we rediscovered it, we realized we had a wine that was harsh and raw, tense and full of life, with a fiery personality. We decided to bottle it as a white wine, rather than turning it into a sparkling wine. It was so vibrant and spirited that we aged it in the bottle for seven more years, allowing it to round out its edges and soften its tension. A unique and one-of-a-kind white, an uncompromising wine that embodies the ultimate risk.
